Ingredients for the Dough

  • 1.5 cups of oat flour

  • 2 teaspoons of peanut butter powder

  • 1 cup of chilled and grated coconut butter

  • 1 large egg

  • 2-3 tablespoons of ice-cold bone broth (can substitute water)

Note: You can prepare coconut butter by melting it down, adding turmeric and fresh cracked pepper, pouring it into ice tray molds, and freezing it before refrigerating.

*Chill the dough for at least 30 minutes before use.

Ingredients for the Filling

  • 2 cups of pumpkin puree

  • 1 tablespoon of honey

  • 1 large egg

  • 1/2 teaspoon of Ceylon cinnamon

Preparation

  1. In a mixing bowl, combine the oat flour and peanut butter powder.

  2. Grate in the chilled coconut butter and add the egg, combining until a crumbly consistency is achieved.

  3. Slowly add the ice-cold bone broth (or water), 1 teaspoon at a time, gently mixing until the dough comes together. Chill the dough for a minimum of 30 minutes.

  4. Preheat the oven to 375°F.

  5. Flour the surface with gluten-free flour and roll out the pie dough to ¼ inch thickness. Use a cookie cutter or jar lid to cut the dough into rounds for pie tins.

  6. Press the dough into the tin form or muffin tin and use a fork to poke holes in the bottom of the dough.

  7. Spoon the filling onto the pie dough.

  8. Brush the dough with egg wash and sprinkle with Ceylon cinnamon and some pumpkin seeds.

  9. Bake for 25-30 minutes until the crust starts to brown.

Optional Whipped Topping

Ingredients

  • 1 cup of chilled coconut cream (chilled for 24 hours)

  • Approximately ¼ cup of tapioca flour

  • 1 tablespoon of gelatin

Preparation

  1. Measure 1 tablespoon of gelatin per cup of coconut cream and add to ¼ cup of cold water. Let it sit for 2 minutes to bloom.

  2. Microwave the mixture for 10-15 seconds to dissolve the gelatin. Stir and let cool slightly. If it solidifies, warm it up before adding it to the cream.

  3. Separate the chilled coconut cream from the liquid and whip the cream until fluffy (approximately 5 minutes).

  4. Add the gelatin and tapioca flour and whip until the desired consistency is achieved.

With this recipe, you can treat your furry friend to a delicious and healthy snack that they'll love. Plus, you don't have to feel guilty about showering them with love and affection!
